Herb baked blue eye on saffron & tomato potatoes

Geez, the recipe title is a bit of a mouthful!
It tasted wonderful though, and was relatively easy to make:
  • par boil the potatoes (do it for longer than the recipe calls for or your potatoes may not be cooked through once you have baked the dish
  • marinate the fish in A LOT of herbs
  • bake it all in the oven (with tomatoes and saffron)
