Herb baked blue eye on saffron & tomato potatoes
Geez, the recipe title is a bit of a mouthful!
It tasted wonderful though, and was relatively easy to make:
par boil the potatoes (do it for longer than the recipe calls for or your potatoes may not be cooked through once you have baked the dish
marinate the fish in A LOT of herbs
bake it all in the oven (with tomatoes and saffron)
